Patum Chickpea Fritters with Green Tabasco Salsa Verde

Chickpea Fritters

  • 6 tbsp Olive oil
  • 2 Garlic Cloves
  • 2 ½ cup Water
  • 1 ½ cup Chickpea Flour
  • 1 tbsp Costa Salt
  • Oil for Frying
  • 2 tsp Patum Gentleman’s Relish

Green Tabasco Salsa Verde

  • 1 Shallot
  • ¾ tsp Costa Salt
  • 1 ½ Cup Parsley
  • 1 ½ Cup Basil
  • ½ cup Olive Oil
  • 2 Garlic Cloves
  • 1 Btl. Green Tabasco


  1. Heat water in a pan and bring to boil. Add Patum gentleman’s relish, half the salt and whisk in the chickpea flour.
  2. Cook till the mix leaves the sides of the pan. Cool and blend with olive oil and garlic to a smooth mix.
  3. Line a shallow tray with the cling film and spread the mix evenly and cool till set.
  4. Cut into small squares or circles and fry in oil till crispy and light golden brown. Sprinkle rest of the salt and serve.
  5. Mix all the ingredients of salsa Verde and blend to a coarse consistency. Serve with chickpea fritters.
